Sweet Potato Skins with Cheddar and Bacon

Potato skins are a popular appetizer, but the very ingredients that make them so irresistible — cheddar cheese, bacon, sour cream, mmm… wait, where was I going with this? Oh, right!

The ingredients that make them so irresistible are also what make them so high in calories, sodium, and fat. Luckily, Biggest Loser chef and cookbook author Devin Alexander created a healthier version of potato skins with smart ingredient swaps.

This is why the recipe works so well, in her words:

“These ‘No-Skins’ incorporate a very strategic use of salt. You season the top of the potato rounds so that when they’re flipped, the seasoning will be on the bottom — ensuring that your tongue hits the salt on the potato first!

“That way, you need less salt overall, and your taste buds will still be satisfied.”
